Carmen Luckey, owner of the Cambridge, has been a Vista resident since 1959. Born in Zacatecas, Mexico; she started in the restaurant industry at the age of 16 as a dishwasher. With persistence and hard work, she achieved the American dream by becoming an equal partner at Daisy’s Restaurant in 1980. In 1982 she sold her interest to purchase a Mexican Restaurant in Carlsbad, while raising 4 children.

 

Now that her children are grown, Carmen has decided to return to what she always loved to do; operating her own restaurant. She had fond memories of dining at “The Cambridge Inn,” which opened in 1980 and thought it fitting to revive the name of Cambridge and provide her customers great dining experiences and traditions for years to come.
